Monteverdi - 1610 Vespers. This is a "don't miss" work as well and should be on your list. Try the Gardiner version for bigger choral sound, although my preference is for Savall's version.

What about a Christmas Mass or two? Any of McCreesh's reconstructions are cool - the Praetorius (1620 Mass), Gabrieli/deRore (Christmas in Venice) or Palestrina (Missa Hodie Christus Natus Est) are all colorful and expertly played and sung. Investigate the Gabrieli one particularly - its something of a classic recording, although the most colorful and instantly tuneful is the Praetorius.

I have heard good things about Thielemann's recording, but - as I detest Thielemann - it's kind of a moot point.

Look for a recording of Heinrich Schütz's Die Sieben Worte Jesu Christi am Kreuz (also referred to as Die sieben Worte unsers lieben Erlosers. I particularly like the Mauersberger recording.

It's really hard to say. I agree with the Monteverdi suggestion. You might want to check out Dowland songs as well (late Rennaisance).

Those interested in choral works by a more modern composer should check out the recordings of the Estonian composer Arvo Part. "Summa", "I Am The True Vine", "Triodion", are a few of his better known choral works. His later work is based on the technique of "tintinnabuli", has a flavor similar to that of early music, and can be very satisfying to listen to. His recordings on the ECM label sound great to boot.
