Why in the world would you want to limit your music choices just to cater to a headphone's sound characteristic? Listen to what YOU want, not what the headphone wants.
Agreed. For a while after getting my HF-1s I thought "well, I guess I should listen to rock stuff I have in high quality rips...", then I slapped myself for being an idiot and started listening to whatever the hell I want to listen to. Equipment is there to serve music, not the other way around.
I admit to doing this all the time, listening to music that sounds best with my headphones. IMO it's actually "improved" my musical tastes . I listen to much more classical these days, and enjoy it more too. Half the reason I was never a big fan in the past is that I never had gear that reproduced it anywhere near accurately.
I don't know about the HD 650s at all, but there's definitely music that I like but that I don't like to listen to on headphones (any headphones). Stuff that I deem driving/singing music seems pointless to listen to on headphones. And really hard rock I can't stand to listen to on headphones. <shrug>
As far as I am aware, strings sound absolutely great with the HD-650 (compared to the Grado). However, I agree that you shouldn't listen to music based on what the headphone does best.
With me, the choice of phones I wear depends on what mood I am currently in (and hence my perception how I want my music is served).

I would also recommend ambient newage, at least with HD580/600 (many similarities). Stuff with lots of chimes, bells, shakuhachi flute, any sort of ambient chillout stuff.
