Is it better to use a Mini to RCA or just a straight out optical from an Nvidia Soundstorm sound card? I am thinking of using a MINI - RCA because it might not have hissing. (I think my optical hisses)

Mini to RCA vs Optical

think you're getting confused.
Optical is digital, and is transmitted over toslink or the smaller mini sized connector (iriver h140)
RCA is electrical can be either analogue or digital, either line out from CD players or digital out from CD or DVD players.
So if you use toslink or mini to RCA it won't work.
Ideally you don't want to use a adaptor to fit over toslink connector to fit the mini. Buy the correct cable for the job without adaptors.
Optical does not hiss, it's your gear down the line that introduces it (analogue section) or the source files have hiss themself.
