Grado (and probably others) make a very nice adapter with a flexible cable between the 1/4" and 1/8" ends.  I've found that the straight/solid ones can put a lot of stress on the socket in the amp.

Of those units, only the Fostex will work with your iPod or iPhone, and it won't take a USB digital signal from your computer.  Nothing portable will do both at the moment.
