I just looked at the specs of the Rega Apollo, it has no hp out, but do have a RCA(L/R) output, but since the Rega website is actually advertising its analogue amplifier, can I just use a RCA to 3.5 cable to go with that RCA out to directly drive my headphones? I'm just curious here, I have hp amps so it is really not an issue.
You could but you would have no control over volume. You dont' want to do that they are line out signals meant to be run to an amp.

Whatever you do, don't fall for the cheap Marantz SA8260's even with the great Stereophile ratings on its sound.
When it works, it's a great player, but it it plagued by transport problems that are supposed to be fixed by a warranty repair, but that repair doesn't always last very long before the units malfunction again.
Marantz CD5001 -- around $300
Denon W1500 (HDCD) around $550
Both have volume-controlled headphone jacks, and good SQ reviews.
I have the W1500 myself -- but I use it with a dedicated headphone amp from the line-out for best possible SQ.
I tried the headphone jack, and it was okay for use with no amp. Similar to my other Marantz reference-series HDCD players/recorders -- but, I amp all my cans, no matter what source I use, even though all my units have volume-controlled headphone jacks, if I want to use them.

i didn't realize that was line out. But then where is the output that uses the internal amplifier? still the RCA? I thought line out signals are not amplified. correct me if I'm wrong.

They tend to be amplified in terms of being 'buffered'. There is no potentiometer in the signal path and they are optimized for high-Z inputs (say to drive a preamp, around 10kohms).

Most CDPs do not have headphone jacks, and if a CDP doesn't have a headphone jack, there is no internal amp. The RCA jacks are always line-outs, for use with an amp. If you get the CDP I linked above, you don't need a separate amp though, as it has a headphone jack.

are you recommending the Marantz coz of its hp output? or do you think its better than the Music Hall CD25?
I wouldn't say I'm recommending the Marantz, just that if I were you, that's probably the one I'd get. There's been lots of positive comments on it at other audio forums. The price isn't bad either and gets even better for that used unit.
I have no experience with Music Hall products and couldn't tell you anything about how the CD25 sounds. It is supposed to be very moddable though, but you probably wouldn't be interested in sinking additional money into it. I think the fact that there are various mods available for the CD25 kinda implies that its stock configuration isn't very good though.
For <$500, I'd recommend the CEC 3300R used. It is pure Class A, separate headphone amplifier circuit, and balanced/unbalanced outputs. Brand new I think its $600 from audiocubes? It can also be used as a really good transport in the future (has optical,coax and AES/EBU).
