Default A choice between what is essentially the same headphone.

I am a headphone newb and am making the choice between a pair of ultrasone pro 750s and ultrazone 2500's.

One is open and one is closed. The closed one is 60 pounds more expensive.

I would use these headphones mainly as a addon for my Blackstar h5 - a guitar amp. but I would also use them for portable music (with my cowon d2) and home music (P.C).

I have read about this forum and googled loads and now have the lo-down on the advantages and disadvantages of open and closed.

And that is where I find it hard to make the decision. Because of the fact that the guides say things like 'Getting more pricey headphones will make up for a closed design' - I am left thinking - what is pricey?

The isolation is important to me and yes it is something that I would be willing to pay for but will it, ultimately sacrifice sound quality?

Forget "sound quality". As much as you may have read this phrase, forget it.

Your choice should be determined by preference, synergy, and utility.

Preference:
You could prefer either of these headphones, and you really can't know which you would prefer until you try them. Some would prefer one with your equipment, while others would prefer the other with your equipment. The question is which you would prefer.

Synergy:
Headphones sound different from different equipment. How do these two headphones sound from your equipment? Answer: different than from other associated equipment. You may prefer one if both were compared with your equipment, but the other if both were compared with other equipment.

Utility:
For what purpose will these headphones be used? Neither of these headphones are intended for portability. But if you will be using them for portability, then the closed ones should be your choice. A better option may be to get the open ones for home use and a cheaper closed pair for portable use.
