In my experience, velour pads create a more focused, less spacious sound, seeming to draw it out horizontally from drivers to ears whereas stock pads seem to be a bit more relaxed, immersive, and vertically roomy in sound. Bass response is increased with velours, but sounds a little cold and unnatural when compared to stock pads. Not a night and day difference, but a difference nonetheless. Velours are more comfortable and seem to improve isolation.
Thanks for the information superpredator.
Do you your K340 moded? I just picked a pair and I am planning to send the Alex to be re-cabled and modified.
I'd agree with what Superpredator said, but the velours do calm down a bit once they soften up and wear in a little.
The changes are pretty minor, but the increased seal and bass makes the velours the clear winner IMO. Not to mention the comfort.

Nice.
I've been thinking about sending mine to Alex at some point, but I'm not really in a big rush.
