Will crossing speaker cables over each other affect sound quality?
I read that they can pickup interference from AC power cords but will crossing the speaker cables over each other affect sound quality at all?

The SuperCables Cookbook recommends against doing that. It is never wrong.

According to science the effect isn't audible.
On the other hand it's quite easy to avoid it so the fool in me says: better safe than worry ........

Try crossing them and see what happens.
You won't hurt anything.
And I strongly recommend experimentation over believing what you read.

Adjusting your speakers and listening position will have vastly more impact on the SQ I'm willing to bet.

i currently have 6 speaker on one a-b channel onkyo reciever,, my onkyo reciever is old and i dont care about it much, i also dont run huge speacker, two bookshelf bose and two old aiwa's, and 2 boxed alpine 6x9,
if u have expensive equipment then dont do this, but if u dont care, try it. but sound quantity over each speaker is obviously affected as you are feeding more speackers from one source
